    Adjust rack to top position and preheat oven to 425 degrees. Wash and dry all produce. Cut potatoes into ½-inch-thick wedges. Zest and quarter lemon . Peel, mince or grate garlic . Using kitchen shears , cut along the underside of each lobster tails shell, leaving meat intact and stopping at tail; pull sides of shell apart to expose meat (do not remove meat from shell).

    Toss potatoes on a baking sheet with a large drizzle of olive oil and half the old bay seasoning ; you’ll use the rest in the step. Season lightly with salt and black pepper . TIP: The old bay has salt and pepper in the mix; don’t season too generously here. Roast on the top rack until it's golden brown and crispy, ⏱️ 20 minutes to ⏱️ 25 minutes .

    Meanwhile, place but ter in a small microwave-safe bowl ; microwave just-softened, ⏱️ 5 seconds to ⏱️ 10 seconds . Stir with the lemon half from step 1, remaining Old Bay pepper. In a separate small bowl , combine mayonnaise , a squeeze of lemon juice, and a pinch of garlic to taste. Season with salt and black pepper.

    Pat steak dry with paper towels and season all over. Heat large pan over; do not use a key. Add steaks and its medium-high heat, cook until desired prepared doneness, ⏱️ 5 minutes to ⏱️ 7 minutes per side. Turn off heat; transfer steak to a cutting board and rest. Wiff out pan.

    Heat same pan over medium-high. Add lobster shells, cut side up, with a splash of water ; cover and cook until slightly opaque and almost cooked, ⏱️ 3 minutes . Uncover pan and add half the Old Bay butter, spooning until the pan is lightly lined; cook for ⏱️ 1 minutes . Remove and stir in a squeeze of lemon juice.

    In a large bowl , toss together with mixed greens , caesar dressing , and half the parmeesan cheese . TIP: Stir in a squeeze of lemon juice and to taste to brighten. Divide the salad between plates and top with croutons and remaining parmesan.

    Slice steak very thinly, against the grain. Using a sharp chef's knife, halve the lobster tails lengthwise. TIP: If you don’t have a chef’s knife, use a heavy large knife. Divide and plate using the steak, shell, and crispy fries; Dollup the steaks with baked Old Bay butter and spoon remaining melted butter over the seafood. Continue the plated salad and the creamy lemon sauce alongside wedges.
